The primary purpose of this class is to challenge students to recognize the interactions among different substances and the human system. In particular, the class has exposed us to insights through which we have been able to appreciate that we are what we eat. When we consume unhealthy foods, it should not surprise us if we develop health complications. Thanks to this class, I have been prompted to be more deliberate in the food choices that I make. Previously, my choices were defined by such factors as pressure from my peers and my emotional state. For example, when dealing with a difficult situation, I sought comfort from sweet and fatty foods. I have gained a better understanding of the importance of taking charge of my plate. I embarked on a 28-day food change plan. This plan involved swapping out bread, carbonated drinks and fatty foods with healthier options. After the 28 day period, I was so pleased with the outcomes that I made a pledge to stay committed to the plan beyond this period.
I feel the need to begin the discussion on my journey with a reflection on the challenges that I encountered. One of the greatest hurdles that frustrated progress was the ubiquity of unhealthy foods from which I was striving to steer away. For example, our refrigerator is packed with cans of soda and fried food. The situation is similar at school where there are vending machines from which one can purchase soda. When one is faced with the very habit that they are trying to abandon, it is nearly impossible for them to make progress. I think that I am now better placed to understand the struggles of those who live in food deserts. Despite their best efforts, these individuals are unable to embrace healthy foods because they are surrounded by fast food. I would challenge those responsible for the stocking of vending machines to prioritize healthier options. I consider myself fortunate because my mother supported my wellness initiative and minimized the amount of bread, fried food and carbonated drinks in the house.

Another challenge that I grappled with concerns limited support. During my 28-day quest, I learnt that for success in the adoption of healthy lifestyles, one needs a strong social support system. Families and friends serve as the primary source of support. When denied this support, individuals are likely to become discouraged and abandon their effort. There are numerous days when I felt that my friends were not supportive of my efforts. I contemplated quitting and returning to my unhealthy old ways. However, thanks to my own understanding that I am ultimately responsible for my health, I stayed the course. I must also recognize the support that my mother offered. After noticing that I was avoiding certain foods, she stopped offering them to me. She reminded me that I am loved and that she thought that I am courageous. I find that her kind and encouraging words incentivized me to continue implementing my new diet plan.
The lack of progress is another hardship that left me discouraged and dispirited. When I gave up soda, chicken and bread, I did so with the expectation that after a few weeks, I would witness a dramatic decline in my weight. This did not happen. My weight remained largely unchanged during the first few weeks. The apparent lack of progress prompted me to question whether the sacrifices that I was making were warranted. I was on the brink of depression. I felt alone, confused and deeply sad. As noted earlier, my struggles challenged me to sympathize with those who lack access to the opportunities and resources that they need to stay healthy. Additionally, these struggles allowed me to reflect on the importance of a strong support system and sobriety. The weight loss and healthy eating journey is riddled with challenges that can only be addressed when one maintains a clear mind and enjoys tremendous support. My friends reminded me that I had made changes to my plate because I wanted to lead a long and healthy life. It was never about losing weight. This reminder played a crucial role in energizing and motivating me.
My 28-day journey was defined by more than just struggles. It also involved triumphs and successes. One of the main goals that I accomplished was a significant drop in weight. I had my weight measured on different days and was glad to learn that I had lost 6 pounds. This weight loss was welcome as it occurred at a time when I was discouraged and depressed. For weeks, I had done as advised but my weight failed to register the sacrifices that I had been making. It was therefore tremendously encouraging when I lost weight. This milestone was so significant that all those who had been tracking my journey noticed the progress. I find that it is indeed important to recognize and celebrate the small improvements that we make. It is these improvements that supply us with the energy and remind us to stay on course.
Another triumph that defined my journey was being able to stay away from unhealthy foods for a number of successive days. Initially, this proved challenging as I was often overwhelmed by the allure of fries and soda. However, during the third and fourth weeks, I was able to avoid the foods with much ease. For example, I could say no when offered soda. Instead, I would ask for fruits and other healthy options. I now have a fresh perspective on weight loss and healthy eating. Previously, I was convinced that with a small amount of commitment, it would be possible to conquer temptation. This understanding has been challenged and I have been forced to recognize that a tremendous amount of will power and dedication is demanded when individuals are trying to lose weight or abandon unhealthy eating habits. I think that I am now better placed to sympathize with those who try but fail to lose weight or embrace healthy foods.
The success that I achieved was made possible by the huge amount of information that I found online. I consulted the websites of such organizations as the Centers for Disease Control and Prevention (CDC). This agency provides the public with information on the link between nutrition and health. Using this information, I was able to confirm that there was a scientific foundation for my decision to avoid carbonated drinks and fried foods. In particular, fried foods increase one’s risk of becoming obese and developing such health conditions as heart disease and diabetes. During my search for information and evidence, I also encountered some sources that were rather dubious and peddled information that was inaccurate, scientifically unsound or simply false. The freedom that the internet offers has created an environment where false and misleading information spreads quickly. I would strongly encourage those seeking information on healthy eating to conduct a thorough scrutiny of sources. They should avoid websites that are known for containing false information and should instead seek insights from such agencies as the CDC whose mandate involves safeguarding public health. I would also challenge the healthcare community to play a more active role in supplying the public with reliable information and setting the record straight regarding the effectiveness of certain diets. For instance, some of the websites that I visited presented the paleo diet as among the most effective lifestyle interventions that safeguard human health. After my internet search, I was able to determine with certainty that the paleo diet delivers any significant benefits. This is why I feel that it is important to sensitize the public by providing reliable information.
It is true that initially, my nutrition change program was to run for one month. During this month, I encountered challenges that I was able to address thanks to the support of my friends and family. The question now is whether I will continue with my implementation of the program. Having witnessed the positive outcomes that the program has delivered, I have to remain committed. I am yet to achieve my ideal weight and I believe that the program holds the key to accomplishing this goal. Furthermore, I fear that if I abandon the program, I will erode the gains that the program has delivered. For example, I could regain the weight that I have lost and this would be an unacceptable regression. I must admit that I am frightened that it may be difficult to continue with the program. I expect that I will feel the desire to return to eating fries, soda and bread. However, I have faith in my ability to resist temptation and to remember that the sacrifices that I make are intended to ensure that I stay healthy. Therefore, I hereby pledge to stay with the program for as long as I can.
In closing, the one-month food overhaul program was as challenging as it was exciting. This program allowed me to test the limits of my will power and patients. Thanks to the initiative, I was also able to determine the critical function that support from friends and family serves. I believe that I now have a deeper understanding of the dynamics of weight loss and healthy eating. While I would not hesitate to warn others about the struggles, I would gladly and passionately encourage them to adopt foods that may not stimulate their taste buds but secure their health.
