As we all know food is very important since it gives our bodies the energy to do our daily chores. Although there are varieties of food in the stores, there is a particular one that stands as my favorite. I easily walk past pizzas and cream cakes but when I see a restaurant offering vegetable rice, I know am in for a tasty meal. I was so used to eating out but at one point I decided to try out and prepare the dish by myself. Below is how to prepare vegetable rice.
To begin with, we need the following ingredients:
2 Cups instant white rice- uncooked
I cup of boiled peas
½ cup chopped red peppers
½ cup chopped capsicum
½ cup chopped carrots-small size
2 spoons canola oil
1 cup chopped onions
1 tablespoon garlic paste
Soy sauce 1 tablespoon
½ cup chopped fresh coriander.

In a sauce pan, boil four cups of water. Stir in rice. Reduce heat, cover and let it cook for 20 minutes.
Meanwhile heat canola oil in a large skillet over medium heat. Add onions and cook until golden brown.
Add red pepper, garlic paste, capsicum, and carrots. Cook for 5 minutes stirring occasionally.
Check on the boiling rice occasionally to ensure it is cooking.
On the large skillet increase heat from medium to heat. If need be, add spices to flavor or rather according to preference.
Stir in the cooked rice, and add a little soy sauce
Stir fry for two minutes.
Add the boiled peas and cook for two minutes
Turn off the heat or alternatively remove the skillet from heat.
Garnish with fresh coriander.
Cover and leave to simmer for 3 minutes before serving.
